OKONOMI means “what you like” or “what you wish,” and YAKI means “grilled” or “cooked.” Thus, OKONOMIYAKI means, “cook what you like.” PON’s Osaka-style Okonomiyaki is the predominant version of the dish, found throughout most of Japan. The batter is made of grated nagaimo(a type of yam),kombu broth,eggs,lots of shredded cabbage,and some flour. It also usually contains other ingredients such as meat (generally thinly sliced pork belly),squid,shrimp,vegetables, mochi or cheese.Okonomiyaki is sometimes compared to omelettes and pancakes,but since it’s a dish you would eat for lunch or dinner,we prefer it to be referred to as a HEALTHY “Japanese pizza”or“Osaka soul food”.
